Vinification: The previously thinned grapes are harvested slightly dried in order to guarantee an adequate potential alcohol content. The grapes are fermented with indigenous yeasts with repeated punching down to ensure excellent extraction of polyphenolic substances. When we reach the halfway point of the alcoholic fermentation, the product is drawn off and fortified in order to block the activity of the yeasts.
Maturation: Maturation takes place in third passage French oak barriques for at least 18 months
Ageing: The minimum ageing is 12 months. The wine expresses its best after a few years
